GINGER CARROT DRESSING

This recipe is one of my favorites, because it features two incredibly nutrient rich foods! Ginger and carrots are great sources of antioxidants, while also packed with vitamins and minerals. Whip up this dressing in 10 minutes or less as a tasty option to pair with your favorite meal or snack!

(please use organic ingredients whenever possible)

Yields: 2 cups

 

 

INGREDIENTS:

 

1 C  carrots, peeled and rough chopped

½ C sweet onion or white onion, peeled and rough chopped

2 T fresh ginger, peeled, finely chopped (or ½ tsp ground ginger)

1 T coconut sugar (can use monkfruit)

¼ C liquid aminos (can use coconut aminos also or GF soy sauce)

1/3C       rice vinegar (plain not seasoned)

½ C avocado oil

2 tsp      toasted sesame oil

Salt, to taste

Optional: sesame seeds (black and/or white)

 

INSTRUCTIONS:

 

  1. Combine all the ingredients except for the oil into the blender and gentle pulse, then blend until the texture is smooth
  2. With the blender on medium speed, slowly add in the avocado oil until the mixture is fully emulsified
  3. Add additional salt, sweetener and sesame oil to taste

 

**Please in an airtight glass container: can keep for about 7-10 days in the refrigerator and about 4 weeks in the freezer
