Ingredients
1 cup red lentils
3 cups vegetable broth
1 cup pumpkin purée
½ onion, chopped
2 teaspoons pumpkin spice
½ teaspoon turmeric
Pinch of cayenne pepper
Instructions
In a large pot, sauté onion until softened.
Add lentils, broth, pumpkin purée, pumpkin spice, turmeric, and cayenne.
Simmer until lentils are tender, about 20 minutes.
Blend for a smooth texture or leave chunky as desired.
