- 4 large carrots, peeled and chopped
- 6 fresh apricots, pitted
- 1 red bell pepper, seeded and chopped
- 1/2 cup orange juice
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- A handful of fresh basil leaves (optional)
- In a blender or food processor, combine the carrots, apricots, bell pepper, orange juice, olive oil, smoked paprika, and cumin.
- Blend until smooth.
- Taste and adjust the seasoning with salt and pepper as needed.
- Chill in the fridge for at least 2 hours before serving to allow the flavors to meld together.
- Optional: Before serving, finely chop the fresh basil leaves and sprinkle them on top for an added layer of flavor.
