Savory Carrot and Apricot Gazpacho

Ingredients

  • 4 large carrots, peeled and chopped
  • 6 fresh apricots, pitted
  • 1 red bell pepper, seeded and chopped
  • 1/2 cup orange juice
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • A handful of fresh basil leaves (optional)

Instructions

  1. In a blender or food processor, combine the carrots, apricots, bell pepper, orange juice, olive oil, smoked paprika, and cumin.
  2. Blend until smooth.
  3. Taste and adjust the seasoning with salt and pepper as needed.
  4. Chill in the fridge for at least 2 hours before serving to allow the flavors to meld together.
  5. Optional: Before serving, finely chop the fresh basil leaves and sprinkle them on top for an added layer of flavor.
