Chilled Avocado Soup

  • 2 ripe avocados
  • 1 cucumber
  • Juice of 1 lime
  • Handful of fresh mint
  • Salt and pepper to taste
  • Water as needed


  1. Blend together the ripe avocados, cucumber, lime juice, mint, salt, and pepper.
  2. Add water gradually until the soup reaches your desired consistency.
  3. Chill in the refrigerator for a couple of hours before serving.
