Carrot and apricot gazpacho is a refreshing and nutritious soup that combines the sweetness of carrots and apricots with the tanginess of orange and other beautiful spices. Here are some benefits of this delicious soup:

High in vitamins and minerals: Carrots are rich in beta-carotene, which is converted to vitamin A in the body and is essential for good vision and a healthy immune system, and can help protect your skin from the sun! Apricots are packed with vitamins A and C, as well as potassium and dietary fiber.

Antioxidant properties: Carrots, apricots, and bell peppers all contain antioxidants that help protect the body from free radicals, which can cause damage to cells and contribute to various diseases. Vitamin C specifically helps neutralize harmful free radicals and reduce photodamage. Excellent sources include citrus fruits, bell peppers, strawberries, kiwi, broccoli, and kale.
  3. Digestive health: Carrots and apricots are both high in dietary fiber, which can aid in digestion and promote regular bowel movements.

Carrot and apricot gazpacho is best enjoyed chilled. After preparing the gazpacho, refrigerate it for at least a couple of hours or until it’s thoroughly chilled. This will enhance the refreshing nature of the soup. While gazpacho can be enjoyed on its own, you can enhance the overall meal experience by serving it with some accompaniments. Crusty bread is a classic choice. Alternatively, you can serve it with a side salad, such as a refreshing mixed green salad or a couscous salad with fresh herbs and vegetables.

Savory Carrot and Apricot Gazpacho

Ingredients

  • 4 large carrots, peeled and chopped
  • 6 fresh apricots, pitted
  • 1 red bell pepper, seeded and chopped
  • 1/2 cup orange juice
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • A handful of fresh basil leaves (optional)

Instructions

  1. In a blender or food processor, combine the carrots, apricots, bell pepper, orange juice, olive oil, smoked paprika, and cumin.
  2. Blend until smooth.
  3. Taste and adjust the seasoning with salt and pepper as needed.
  4. Chill in the fridge for at least 2 hours before serving to allow the flavors to meld together.
  5. Optional: Before serving, finely chop the fresh basil leaves and sprinkle them on top for an added layer of flavor.
